Olive Garden Style
Chicken Scampi

If you've enjoyed "Chicken Scampi" served at the Olive Garden restaurant, you'll find this recipe to be a very close copy.

 

INGREDIENTS FOR WHITE SAUCE:

 

1.5 Tbls-- Butter or Margarine
1 Tbls---- Corn starch

8 oz. ---- Milk

1/2 tsp ---Salt

1/8 tsp ---Pepper

 

 

PREPARATION OF WHITE SAUCE:

 

Melt butter in a nonstick skillet on medium heat.

 

Put Corn Starch, Milk, Salt and Pepper into a shaker and shake until well mixed.

 

Add Corn Starch mixture to the melted butter.  Continue to cook and stir until sauce thickens and is lump free.

 

Set this aside.  You will have much more white sauce than you will actually need.

 

 

INGREDIENTS FOR SCAMPI SAUCE:

 

2 sticks ---- Butter or Margarine

2 Tbls--------Crushed garlic (real garlic,

------------- not salt or the dried stuff)
2 Tbls------- Chicken stock
3/4 cup ------Chablis (actually, I used -----------------Riesling and it worked fine)

------------- or any white wine that's not

------------- too sweet
1 cup ------- Water
1/4 cup ----- White sauce
1 tsp ------- Crushed red pepper
2 Tbls------- Italian seasoning
 black pepper to taste

 

 

PREPARATION OF SCAMPI SAUCE:

 

Heat butter over a slow heat. add the garlic, Italian seasoning and crushed red pepper. Cook for about 2 minutes on low heat.

 

Add the wine, water, and chicken base. Stir until combined.

 

Add the white sauce mix and stir until
slightly thickened

 

 

FINAL INGREDIENTS:

 

1/2 package -- Angel hair pasta

1 ea ----------Red, Green, & Yellow Bell

-------------- Pepper, thinly sliced

1 medium ----- Red Onion, thinly sliced

10 cloves ---- Fresh garlic

Chicken Tenderloins-- As many you feel like

----------------------cooking or eating!)

 

 

FINAL PREPARATION:

 

The amount of Bell Peppers and onion can be increased or decreased depending on personal preferences.

 

Cook pasta according to package directions.

 

Put the garlic cloves in a small nonstick skillet with some oil and braise them for about 20 minutes on low heat. Just put the lid on the skillet and let them cook...they should be golden and really soft when they are done.

In a large nonstick skillet, sauté the peppers, onions, and chicken until the chicken is completely cooked.  Stir and turn occasionally.

 

Add the angel hair and pour the sauce over the chicken contents of the skillet.

 

When everything is mixed together and sauce is reheated, Add the garlic cloves.

 

Serve hot!!  Enjoy
