I
took my daughter's recipe for "Squash Casserole" and modified it to a lo-fat, and lo-calorie recipe. For those of you who
are familiar with the points system currently used by "Weight Watchers", I have listed the ingredients and their corresponding
points at the end of this recipe.

INGREDIENTS:
4
to 5 lb--Yellow or zucchini squash
6 ounces---Egg Beaters, beaten
1 cup------Bread crumbs(see
below)
1 packet---Butter Buds flavor mix
4 oz. -----Hot water
12 packets-Equal sweetener
2 Tbls-----Finely chopped Onion
2 Tsp------Salt
1 Tsp------Pepper
PREPARATION:
After
cutting the ends off of the squash, cut it into cubes, skin and all, and boil until they are tender.
Drain
the squash in a colander and mash with a hand mixer.
Mix
the Butter buds with the hot water per instructions on the Butter Buds box. Now
add this and all of the remaining ingredients holding back a small amount of the breadcrumbs.
Continue mixing until it is well blended.
Pour
the entire mix into a casserole bowl and sprinkle the held back breadcrumbs on top.
Bake
at 350 until lightly brown.

Bread
Crumbs:
Take a loaf of light white bread, such as the 20-slice loaf made by Wonder. Put the slices out until they are dried, usually a day or two.
Now
put them in a blender or food processor and make crumbs. I then store them in
a tightly sealed quart size jar. One loaf makes about 3 cups.
Determining
Points for Bread Crumbs:

slices of this bread equals 160 calories, 1 gram of fat, and 10 grams of fiber. This
is equal to 1 Point. Since 20 slices make 3 cups of crumbs, then 1 cup of crumbs
is made from approximately 7 slices of bread, or, 2 points.
