Squash Casserole

My Dad, Ron Geyer, took this recipe and made it into a low calorie, low fat recipe.  It can be found on this web site under "59ers Recipes".  Just look down the

"Lo-Calorie Recipes" in the left column.

INGREDIENTS:

4 to 5 lb--Yellow or zucchini squash

2 eggs-----Beaten 

1 cup------Bread crumbs

1 stick----Butter or margarine

¼ cup------Sugar

2 Tbls-----Finely chopped Onion

2 Tsp------Salt

1 Tsp------Pepper

 

PREPARATION:

 

After cutting the ends off of the squash, cut it into cubes, skin and all, and boil until they are tender.

 

Drain the squash in a colander and mash with a hand mixer.

 

Add all of the remaining ingredients holding back a small amount of the bread crumbs.  Continue mixing until it is well blended.

 

Pour the entire mix into a casserole bowl and sprinkle the held back bread crumbs on top.

 

Bake at 350 until lightly brown.

Strawberry & Spinach Salad

INGREDIENTS:

2 pints-Sliced Strawberries (Leave a few

---------whole to use for garnish)

1.5 bags-Baby Spinach

½ cup----Oil

¼ cup----Apple Cider Vinegar

½ cup----Sugar

2 Tbls---Sesame seeds

1 Tbls---Poppy Seeds

1.5 Tbls-Finely chopped onion

1 Tsp----Paprika

1 Tbls---Worcestershire

 

DIRECTION:

 

Mix the Oil, Vinegar and Sugar until sugar has dissolved.  I found that micro waving this mix for about 40 seconds helps this.

 

Now add the Sesame and Poppy seeds, the onion, paprika and Worcestershire sauce to the Oil/Vinegar/Sugar mixture.

 

Pour over the strawberries and spinach when you are ready to serve.  Toss salad and garnish with the whole strawberries.
