Ruben Casserole

I got this recipe from Channel 13, WQED - quick cook book.  I tried it on Saturday and it was delicious and a keeper for the family.  -- Barb

INGREDIENTS:

1 lb ----Chipped deli Koshered Corned Beef
---------(chop a little) 
1 lb-----Swiss Cheeese (shredded)
1 loaf---Rye Bread of your choice
---------(12 slices) buttered and cut
---------into 1 inch cubes.
8 oz-----Thousand Island Dressing
1 bag----Sour Kraut, drained and squeezed.
 
In a 13x9" buttered or sprayed casserole layer the sour kraut.  
Layer kraut with beef.
Layer beef with dressing.
Layer dressing with cheese. 
Finally the last layer is the bread cubes.
Press the bread cubes down as you layer.

Preheat oven to 350 and bake for 45 min.
Cover the casserole with foil for the
first 20 min.  Let it sit for five min.
before serving.

This is real easy to make and we got 6
Large servings (probably 8 servings if
you have a salad or something, with it).

You could probably use low fat cheese
and dressing to help with the calories.
You could also try rinsing the kraut to
lower the sodium content a little.

Let me know if you try it.

I think this would be good on a buffet
table for a party, with smaller portions.

Apricot Chuck Roast

INGREDIENTS: 

2 to 3--- Pound chuck roast

1 ------- Can of apricot juice - 12 oz

1 ------- Can of Classic Coke

1 ------- Small jar of spicy brown mustard

2-4 ------Med. potatoes

1 ------- Med. onion

2-4 ------Med. carrots

2-4 ------Stalks of celery

  1. Turn oven on to broil.
  2. Baste one side of roast with spicy brown. Put in broiler for 5 Min.  Turn over and baste other side with spicy brown mustard and put back in broiler for 5 min.
  3. Put roast in roaster on a rack.  Slice onions and carrots and celery and put around roast.  
  4. Pour Classic Coke and Apricot Nectar over roast and veggies. 
  5. Bake at 350 - 375 for one hour covered.  Half potatoes and cook until desired tenderness.  Remove meat and veggies. 
  6. Make gravy from drippings. Just make the gravy with flour and water, like you would do with any roast.  Makes some of the best tasting and sweet gravy to be had.
